NO/Bake Strawberry Preserves ´N Walnut C

Servings: Makes one 9-inch cheesecake
Ingredients
1 1/4 cups graham cracker crumbs
1/4 cup sugar
1/3 cup margarine or butter, melted
2 (8-ounce) packages cream cheese, softened
1 (14-ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
2 envelopes unflavored gelatin
1/4 cup lemon juice mixed with 1/4 cup water
1 Cup Strawberry Preserves--not jelly
1/2 cup chopped walnuts
1 tablespoon grated lemon rind
1 cup Cool Whip plus extra for garnish
TOPPING
Strawberry Preserves,Cool Whip and additional walnuts, if desired
Instructions
Combine crumbs, sugar and margarine; press on bottom of 9-inch spring form pan. In large mixer bowl, beat cream cheese until fluffy. Gradually beat in EAGLE BRAND® until smooth. In small saucepan, sprinkle gelatin over lemon
juice; let stand 1 minute. Over low heat, stir until gelatin dissolves. Add to cream cheese mixture with Preserves, walnuts and rind; mix well. Fold in Cool Whip; pour into prepared pan. Chill 3 hours or until set. Garnish with Strawberry Preserves,Cool Whip and additional walnuts. Refrigerate.
NOTE PINEAPPLE PRESERVES CAN BE USED INSTEAD OF STRAWBERRY IF DESIRED
