Chicken and Potatoes Dijon

1 lb potatoes
4 green onions sliced
2 lb chicken thighs
Fresh rosemary to taste
garlic, minced to taste
1 tbsp dijon mustard
basil to taste
oregano to taste
2/3 cup red wine or any kind you like to drink
1/4 cup sour cream
Microwave potatoes 10 minutes, cool and cut into 1/2 inch chunks.
Spray large skillet with cooking spray, add potatoes and onions, cook
10 minutes. Push potatoes to side of skillet, add chicken and
rosemary. Cover and cook 20 minutes. Remove chicken and potatoes and
keep warm.
Add garlic to skillet, cook 1 minute. Add mustard, seasonings, wine.
Cook over high heat until reduced by half. Remove from heat and
whisk in sour cream. Pour sauce over chicken.
NOTE: White wine makes a better looking sauce, but red wine tastes
better.
