COWTOWN CHILI

3 1/2 pounds well trimmed beef* cut into small cubes
1/8 cup oil
1 1/2 cups finely chopped onions
3 garlic buds, minced
1 1/2 to 2 cups water or beer
1 (4-ounce) can green chilies
1 (16-ounce) can tomato sauce
1/2 tablespoon salt
1 teaspoon ground oregano
2 teaspoons ground cumin
2/3 to 3/4 cup chili powder
In a large heavy Dutch oven, cook meat in oil Add onions and garlic; cook until wilted. Add water, cover and cook 30 minutes. Chop green chilies and tomatoes together until fine in texture. Add tomato mixture and salt to meat;
cover and cook until meat is tender. Stir often and add more liquid if necessary. About 30 -45 minutes before chili is ready to serve, mix all seasonings together and stir into meat, cover and cook.
