Spicy Arkansas Chili

10 oz. vegetarian burger patties
1 cup onion, diced
1 cup green pepper, diced
1 garlic clove, minced
2 Tbsp. chili powder
1 cup canned ground tomatoes, or diced tomatoes diced finer by hand
1/4 cup tomato salsa
Pinch of salt
Pinch of black pepper
1 can kidney beans
1. Cook vegetarian burgers according to package directions. Chop coarsely.
2. In a nonstick pot, combine onion, bell pepper, garlic, chili powder and kidney beans. Add 1/4 cup water, bring to a simmer and simmer until vegetables are soft and water evaporates, about 5 minutes.
3. Add tomatoes, salsa, chopped vegetarian burgers, and 2 cups water. Bring to a simmer, cover, and adjust heat to maintain a slow simmer. Cook until chili is thick and flavorful, about 20 minutes.
4. Season to taste with salt and pepper.
Chef’s Tip
This tasty basic chili could accommodate the seasonings and ingredients you like best. Add minced jalapeno chiles if you like, or some dried frozen corn, dried oregano or pinto beans. Use vegetable broth in place of water for an even more flavorful chili.
