    Pineapple Cookies

    Aunt Saunny

    1-1/2 C brown sugar
    1 C. crushed pineapple, drained
    1 tsp. baking soda
    1 tsp. baking powder
    1/2 C. nuts chopped/ / I like english walnuts but pecans are good too
    2/3 C. shortening
    3-1/2 C. flour, sifted
    1 tsp. vanilla
    1 tsp. salt
    2 eggs/beaten

    Cream brown sugar and shortening together. Then mix in eggs, vanilla and pineapple. Now gradually add remaining ingredients and mix well. Bake on a greased cookie sheet.
    Drop by spoonfulls be syre to seperate where they do not stick together or you will get one big lumpy cookie.
