The Ultimate Oatmeal Cookie

1 1/4 cups packed brown sugar
1 cup butter or margarine, softened
1 tsp baking soda
1 tsp ground cinnamon
1 tsp vanilla
1/2 tsp salt
2 eggs
3 cups quick-cooking or old fashioned oats
1 1/3 cups all purpose flour
1 cup raisins
Heat oven to 350 F. Beat all the ingredients except the oats, flour, and raisins in a large bowl with electric mixer on medium speed - or - mix with a wooden spoon. Stir in oats, flour, and raisins. Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 9 to 11 minutes or until light brown. Immediately remove from cookie sheet to wire rack.
Variation: Oatmeal/Chocolate Chip Cookies
To make these delicious cookies, just omit the cinnamon and stir in a 12 ounce package of semisweet or milk chocolate chips with the oats and the flour.
Yield: about 3 dozen cookies
