1. If buying fresh herbs at the market, rinse and dry them when you get home and place them in a plastic bag with a paper towel to absorb extra moisture.
2. Prolonged exposure to heat destroys flavor in most herbs. Add at the end of cooking time or just before serving.
3. When buying fresh herbs, reject any that are limp.
4. Fresh herbs are an excellent source of nutrition. Parsley provides vitamin C and iron, as does basil. Most are a good source of beta-carotene.
