1. Always use tongs when handling chicken to be fried. A fork pierces the flesh and allows juices to run out.
2. Use peanut oil to fry chicken; it has a hotter smoking point than vegetable oils.
3. Do not overcrowd chicken in the pan.
4. Use a cast-iron skillet whenever possible when frying chicken. It absorbs heat evenly and eliminates hot spots.
