1 cup pearl tapioca
8 cups water
1 cup golden raisins
1 cup dried pitted prunes
1 cup dried apricots
1 cup dried apples
1/2 cup currants
1/2 lemon, thinly sliced
1/2 orange, thinly sliced
6 whole cloves
2 (3 inch) cinnamon sticks
1/2 cup sugar
2 cups apple cider or grape juice
1 (16 ounce) can pitted sweet cherries
In slow cooker soak tapioca in 4 cups water overnight. Cook on HIGH,
stirring occasionally, until clear (2 to 2 1/2 hours). Meanwhile, in
3-quart
saucepan combine all remaining ingredients except sugar, apple cider
and
cherries; bring to a full boil. Cover; remove from heat. Let stand 30
to 45
minutes. Remove lemon, orange, cloves and cinnamon. Add fruit mixture,
sugar
and cider to tapioca in slow cooker. Cook on low for 2 to 3 hours or
until
fruit is tender. Stir in cherries; cook until heated through (10 to 15
minutes). Serve warm or chilled.
