Creamy Layered Jello Squares

1 1/2 C. boiling water
1 (8 serving size) pkg. or two (4 serving size) pkgs. Jell-O lime
flavored jello
ice cubes
1 C. cold water
1 1/2 C. thawed Cool Whip, divided
lime zest, if desired, for garnish
Stir boiling water into Jell-O in large bowl at least 2 minutes or
until
completely dissolved. Add enough ice to cold water to measure 1 1/2 C.
Add gelatin; stir until ice is completely melted. Refrigerate about 45
minutes or until gelatin is slightly thickened. Remove 1 1/2 C. of the
gelatin to another bowl; set aside. Add 3/4 C. Cool Whip to remaining
gelatin; stir with wire whisk until well blended. Pour into 8 inch
square dish. Refrigerate about 15 minutes until set but not firm.
Carefully spoon reserved gelatin over creamy layer in dish. Garnish
with
lime zest. Refrigerate 3 hours or until firm. Cut into 9 squares to
serve. Top each serving with a dollop of remaining Cool Whip when
serving, if desired. Makes 9 servings.
