    Prep: 15 min, Cook: 25 min.
    a.. 2 lbs. peaches, sliced
    b.. 1 Tbs. plus 1 tsp. water
    c.. 3-1/2 Tbs. sugar
    d.. 3/4 tsp. ground cinnamon
    e.. 2/3 cup buttermilk baking mix
    f.. 2 tsp. sugar
    g.. 2 tsp. unsalted butter, melted
    h.. 2 Tbs. plus 2 tsp. milk

    Preheat oven to 425°F. Place peach slices close together in a greased 10x6 inch or 9x9 inch square pan. Sprinkle with water, sugar and cinnamon. Bake 20 minutes while preparing topping. Combine remaining ingredients in a bowl and mix to form a soft dough. Gently smooth dough into a ball on a floured cloth-covered board. Knead dough 8-10 times. Roll
    dough into a 10x6 inch rectangle and place over hot peaches. Cut several small crisscrosses in dough. Bake 20-25 minutes.
