    Cheesy Spinach Dip

    Aunt Saunny

    10 oz pkg frozen chopped spinach
    1 TB butter
    1 TB all-purpose flour
    4 oz shredded cheddar cheese
    1/2 c commercial sour cream
    1/2 ts onion salt
    1/4 ts lemon juice
    1/8 ts pepper

    Cook spinach according to package directions, omitting the salt; drain
    and press well to remove liquid
    Melt butter in a heavy saucepan over low heat; add flour, stirring
    until smooth. Cook 1 minute, stirring constantly. Add spinach and
    remaining ingredients. Stir well. Serve warm with crackers.
    Yield: about 2 cups
