    3 firm-ripe tomatoes -- cored and peeled
    1 TBS finely chopped salad onion or (green/spring
    onions)
    4 fresh basil leaves -- finely chopped or
    shredded (chopped
    parsley or cilantro or a combination could
    be substituted)
    2 tsp - 1 TBS light olive oil
    1 TBS lime or lemon juice
    few drops balsamic vinegar -- (optional)
    salt and freshly milled black pepper

    Halve the tomatoes and gently squeeze away the seeds.
    Cut the flesh into tiny dice and place in a small
    mixing bowl. Add the onion, basil leaves, oil, lemon juice and a few drops balsamic vinegar (if used).
    Mix gently.Season to taste.
