    ALMOND AND HERB CRUSTED FISH FILLETS

    Aunt Saunny

    1/2 cup saltine crackers crumbs
    1/4 cup ground almonds
    1 tsp. dried thyme
    1/4 tsp. pepper
    1 pound fish fillets
    1/4 cup milk
    Vegetable oil for frying

    1. Combine cracker crumbs, ground almonds, thyme and pepper in a shallow bowl. Dip fish fillets in milk. Dredge fillets in cracker crumb mixture, pressing firmly to adhere crumbs.

    2. Panfry fillets in hot vegetable oil 3 minutes per side or until golden and done. Drain on paper towels. Yield: 4 servings.
