olive oil
2/3 cup onion-chopped
2/3 cup green pepper-chopped
2/3 cup celery-chopped
2 cloves garlic-chopped
1 cup dry white wine
2 lbs. of trout filets

Pour a little olive oil in a large skillet. Add onion, green pepper, celery and garlic and sauté. Add dry white wine. Add trout. Cook trout for 4 minutes on each side or until flakey. Serve over rice
