Cabbage
Remove the outer leaves and wash. Cut into wedges or shred. Blanch for one and a half minutes if shredded or two minutes if cut into wedges. Cool in ice water for a couple minutes. Drain. Store in freezer bags. Cabbage can keep up to six months.
Carrots
Wash the carrots well and cut them into large pieces. Blanch for three minutes then cool them in ice water for a few minutes. Drain. Spread the carrots out on a tray and freeze 30 minutes. Pack them in freezer bags. Carrots can keep up to six months.
Cucumbers Peel and chop cucumbers. Pack them in plastic containers with tightly fitting lids and freeze. Cucumbers keep up to six months.
Okra
Wash the okra and trim off the stems. Blanch in boiling water three to four minutes. Cool in ice water for three to four minutes. Drain and place in freezer bags. Okra keeps up to six months.
Onion
Peel the onion and then chop it or cut it into rings. Wrap it in layers of plastic wrap and place in a plastic container. Onions keep up to three months.
Pepper
Wash the pepper and remove the seeds. Cut it into slices. Place on a tray. Freeze for 30 minutes. Place in freezer bags. Peppers keep up to six months.
Potatoes
Wash new potatoes and cook in boiling water until they're almost done. Drain, cool and place in freezer bags. Freeze up to six months.
French Fry sliced Potatoes
Slice potatoes and deep fry for four minutes. Potatoes should be tender but not browned. Drain, cool and place on a tray. Freeze for 30 minutes. Pack in freezer bags. Freeze up to three months.
Mashed Potatoes
Make mashed potatoes and freeze up to three months.
Tomatoes
Wash tomatoes and remove stems. You can freeze them cut into halves, quarters or whole. Dry and place in freezer bags. Tomatoes keep for six months.

Dip whole tomato in boiling water for one minute. Remove and peel. Place the tomato on a tray and freeze for 30 minutes. Place in plastic bag. Keep up to six months.
