Magic Caramel Icing

2 C. sugar
1 C buttermilk
1 C. shortening
1 tsp. soda
Measure ingredients into 3 or 4 quart saucepan. Cook to soft ball stage. Stir mixture constantly with a long handled spoon(this stirring breaks the bubbles and helps to keep the frisky mixture in the pan) When soft ball stage remove from heat. Beat until creamy and ready to spread.
Never leave the mixture on the heat if you have to ve away from the stove. It takes about 20 or 30 min. to make this delicious icing, and it will cover the tops and sides of two 8" cake layers. You may substitute 1/2 C. butter for half the shortening
