    Aunt Saunny

    1 package (1 pound) confectioners’ sugar
    ½ teaspoon cream of tartar
    3 egg whites, at room temperature

    In large mixing bowl with electric mixer at low speed, combine all ingredients. Beat at medium speed for 7 to 10 minutes, or until icing is very stiff. Keep icing covered with damp towel at all times to prevent it from drying out.
    Makes 3 cups.
