Blackening Spice Mix

Aunt Saunny
1 teaspoon ground basil
1 teaspoon ground thyme
1 teaspoon garlic
1 teaspoon white pepper
1 teaspoon black pepper
1 teaspoon salt (sea salt is better)
1 teaspoon onion powder
2 teaspoons cayenne pepper
1 teaspoon paprika
Mix all ingredients together. Place in an empty used spice bottle or jar for storage.
Cajun Blackening Spice
5 tsp. paprika
1 tsp. ground oregano
1 tsp. ground thyme
1 tsp. cayenne pepper
1/2 tsp. ground black pepper
1/2 tsp. ground white pepper
1/2 tsp. garlic powder
Mix together and store in an air-tight container.
NOTES: Sprinkle over meats and seafood before grilling or pan frying for an authentic Cajun taste.
Blackening (Or Bronzing) Spices For Fish
1 tsp onion powder
3/4 ts oregano
3/4 ts thyme
1 tsp black pepper
1 tsp white pepper
1 tsp cayenne pepper
2 tsp salt
4 tsp paprika
1 tsp granulated garlic powder
Combine the seasoning in a bowl, mix well.
