    Aunt Saunny

    Ingredients:
    4 large potatoes, peeled
    1/4 onion, chopped
    2 eggs
    1/4 cup flour
    1 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. baking powder
    oil for frying
    Directions:
    In large bowl, place grated potatoes, onion and eggs.
    Stir to mix. Add flour, salt, pepper and baking powder.

    Mix well. Heat about 1/2 cup oil in skillet.
    Drop mixture by spoonfuls into hot oil, flattening with a spoon.
    Cook until browned, about three minutes on each side.
    Drain on paper towels. Makes about twenty-four small latkes.

    Serve with applesauce.
