    Christmas Pecan Cake

    Aunt Saunny

    2 cups butter
    2 cups sugar
    6 eggs
    1 tablespoon lemon juice
    1 teaspoon grated lemon peel
    1 tablespoon vanilla
    3 cups sifted flour
    1 teaspoon baking powder
    1/4 teaspoon salt
    1 1/2 cups golden raisins
    4 cups pecan halves
    Cream together butter and sugar; beat in eggs 2 at a time. Add lemon juice, grated lemon peel and vanilla. Mix raisins, nuts and 1/2 cup flour. Sift remaining dry ingredients. Alternately fold in nuts, raisins and dry ingredients into the creamedmixture. Spoon into greased paper-lined 10-inch tube pan. Bake 1 hour 50 minutes at 300 degrees. Cool before removing from pan.

    Variation: For a sweeter, more moist cake, pour on a syrup of 1/4 cup each lemon juice, orange juice and sugar while it is still warm from the oven.
