HOLIDAY MINI QUICHE CUPS

INGREDIENTS:
3 large eggs
1 10-ounce package frozen chopped spinach
3/4 cup shredded reduced-fat cheese
1/4 cup diced red and green peppers
1/4 cup diced onions
DIRECTIONS:
Preheat oven to 350 degrees. Line 12 cup muffin pan with
foil baking cups, spray the cups with the cooking spray.
Thaw and drain spinach. Mix the spinach, egg, cheese
peppers, onions and salt in a bowl. Divide mixture into
12 foil cups. Bake 20 minutes, a knife inserted in the
middle should come out clean.
Yield: 1 dozen mini-quiches
