Pomegranate Ice

Notes: Look for unsweetened pomegranate juice in health-food stores. This beautiful ice with its vibrant flavor is especially good served with the apple sherbet (preceding).
Makes: About 1 1/2 quarts, 12 servings
2 cups sugar
1 quart unsweetened pomegranate juice
In a 2- to 3-quart pan over high heat, stir sugar and 1 cup juice until sugar dissolves, about 5 minutes. Let cool, then combine with remaining juice and chill until cold (set pan in ice water to speed chilling).
Freeze mixture in an ice cream maker according to manufacturer's directions. Wrap airtight and place in freezer until firm enough to scoop, at least 3 hours. Store up to 1 week.
