Neptune Pocket Sandwiches

Prep Time - 10 Minutes Serves:
2 cans (about 7 ounces each) tuna, drained and flaked
1 Sunkist orange -grated peel
2 Sunkist oranges , peeled, cut into bite-size pieces, and drained
½ cups mayonnaise or salad dressing
¼ cups chopped green onions (scallions)
6 (6-inch each) loaves pocket bread, cut in half
fresh spinach leaves, cut into thin strips
To make one portion:
In a bowl, combine the tuna, orange peel, orange pieces, mayonnaise, and green onions.
Spoon about 1/4 cup of the tuna mixture in the pocket of each bread half, fill with spinach.
TANGERINE VARIATION:
Substitute fresh grated peel of I tangerine and 3 medium tangerines, peeled, segmented, seeded, and cut in half for the orange peel and pieces.
DOUBLE APPLE VALUATION:
Omit the orange peel and pieces. Substitute fresh grated peel and juice of 1/2 lemon, 1 can (8 ounces) crushed pineapple, drained, and 1 apple, chopped.
