    MEXICAN RICE

    Cook 1 C. raw white rice as directed using chicken broth. Fluff.
    Saute 1 C. chopped onion in 3 tbl. butter. Mix rice, onion, 7-8 oz
    can green chiles, 2 C sour cream and 1/2# Jack Cheese or Jack/Colby
    mixture. Pour into buttered baking dish. Bake at 325 deg. for 30
    mins. (More cheese may be put on top.)

    SERVE WITH: fresh fruit salad, more warm tortillas, salsa, and a good
    guacamole.
