Tex-Mex Macaroni & Cheese

Ingredients
8 ounces uncooked mostaccioli or other tube-shaped pasta, prepared according to package directions, without salt
1 cup shredded low-fat Monterey Jack cheese
1/2 cup finely chopped red or green bell pepper
2 jalapeno peppers, finely chopped
1/2 cup fat-free sour cream
1/2 cup skim milk
1 teaspoon onion powder
3/4 teaspoon ground cumin, divided
1/2 teaspoon salt
1 cup chopped, seeded, plum tomatoes
1/2 cup Kretschmer® original toasted wheat germ
2 tablespoons dry bread crumbs
2 tablespoons 60% vegetable oil spread, melted
Directions
1. Heat oven to 350 degrees F. Lightly spray 9-inch square baking dish with no-stick cooking spray.
2. In large bowl, combine drained cooked pasta, cheese and peppers; spoon into baking dish. In same bowl, combine sour cream, milk, onion powder, 1/2 teaspoon cumin and salt; mix well. Pour sauce over pasta mixture. Spoon chopped tomatoes evenly over top.
3. In small bowl, combine wheat germ, bread crumbs, remaining 1/4 teaspoon cumin and vegetable oil spread; mix well. Sprinkle over tomatoes.
4. Bake 30 minutes or until heated through.
