6 7-oz. prime tenderloins of beef
Olive oil
1 Tablespoon butter
4 tomatoes - diced
1 onion - diced
1 small bell pepper - diced (the yellow ones make for a beautiful presentation)
1 serrano pepper - finely diced
3 cloves garlic - finely diced
1 cup tomato juice
Handful fresh cilantro - chopped
Salt and pepper to taste
In sauté pan, over medium heat, combine butter, tomatoes, onion, bell and serrano peppers, garlic, cilantro, salt and pepper. Mix and add tomato juice. Simmer until reduced by half. Prepare filets by rubbing with olive oil, salt and pepper. Grill to preferred doneness and serve sauce on top. Serves six.
