Pineapple Chicken Stir Fry

1/4 c lite soy sauce
2 T sugar
1 T cider vinegar
1 T ketchup
1/2 t ground ginger
2 clv garlic, minced
1 lb boneless, skinless chicken breast, cut in strips
2 T vegetable oil
1 pkg frozen stir-fry vegetables (16 oz)
1 can unsweetened pineapple chuncks, drained (16 oz)
In a small bowl combine the first 6 ingredients, set aside. In a large skillet or wok, stir fry chicken in oil for 5-6 minutes until juices run clear. Add vegetables & stir fry 3-4 minutes until crisp-tender. Stir in pineapple and soy sauce mix. Heat through. Serve over hot cooked rice. Makes 6 servings.
