3 or 4 medium sized potatoes
10 eggs
1/4 cup milk
1/4 cup (1/2 stick) butter or margarine
1 tsp salt
1 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 pound cooked crumbled sausage
16 oz frozen broccoli (defrost it in the microwave)
2 cups shredded cheddar cheese
Scrub and peel the potatoes, then slice them into 1/4 inch circles.
Boil them in salted water until tender but not mushy (maybe 10-15
minutes)then drain them. Preheat oven to 350 degrees. Whisk the
eggs with the milk, salt, pepper, garlic powder, and onion powder
until uniform in color and slightly frothy. Stir in potatoes. Melt
the butter in large oven proof skillet over medium high heat until
melted. Add egg mixture to skillet and stir while cooking until
eggs start to solidify. Stir in sausage and broccoli. Move skillet
to the oven for about 10 minutes then add cheddar chesse to the top
and put back in the oven for another 10 minutes. Remove from oven.
Serve wedges with toast for breakfast or with a side salad for
supper. This dish is wonderful whether it is hot, cold or room
temperature. You can omit the sausage and broccoli and add any
other ingredients you think sound good.
