STIR-FRY BEEF AND VEGETABLES

500gm. sliced rump steak [trimmed of any fat]
1 tablespoon cornflour
6 large sliced garlic cloves
1 straw-cut carrot
1 meduim onion cut into 1/8's
6 med. mushrooms cut into 1/8's
2 sticks celery cut to 1" pieces
2 cups chopped cabbage
1 cup chopped cauliflower
1 cup chopped broccoli
a good pile of clean and dry english spinach
2 tablespoon vegetable oil [low cholesterol]
1/2 cup chicken stock
2 tablespoons oyster sauce..
1 tablespoon soy sauce...
2 teaspoons sesame oil
you may add by the half cup any or all of the following.......... been sprouts, chinese corn, sliced water chestnuts, frozen peas, corn, cashews....
using a wok with a lid....
toss steak and cornflour, and heat the oil to very hot in the wok... add garlic and keep it moving.. then add the floured meat.. keep tossing and turning over the heat ... until the meat and the garlic are browned... [not burnt] remove meat and garlic and set aside..
add carrot, onion, mushrooms, celery and toss through the oil ... until starting to brown.. keeping the wok hot.... add cauliflower, broccoli, and cabbage and stock.. toss through and place lid on the wok and simmer for 2 minutes... remove lid stir through adding the meat and any of the extra's mentioned above...
add sauces and sesame oil stirring all through.. lastly add the spinach.. toss through until wilted..
Serve immediately ~ with boiled rice, fried rice or chinese noddles.
