Florida Key Lime Pie

8oz Digestive Biscuits or Graham Crackers, crushed into fine
crumbs
4oz Butter, melted
8oz Cream cheese
6oz Sweetened condensed milk
Grated rind and juice of 2 limes
10 fl oz. Double Cream
Mix together biscuits and melted butter. Press into a lightly greased
9inch loose bottomed flan tin. Chill until required.
Beat the cream cheese and condensed milk until smooth. Beat in the
grated lime rind and 6 tablespoons limejuice. Whip cream into soft
peaks, then fold into the cream cheese mixture. Spoon into biscuit
base. Chill for 1 hour and serve.
