    Spicy pork roast

    Aunt Saunny

    1 (4 lb.) pork loin roast
    1 (8 oz.) can tomato sauce
    1/4 cup packed light brown sugar
    1/4 cup cider vinegar
    1/4 cup dark corn syrup
    1 tbsp. cornstarch
    1/2 tsp. salt
    1/8 tsp. pepper
    1/4 cup water

    Place pork roast, fat side up, on rack in open roasting pan. Insert
    meat thermometer into center of roast, being careful not to touch
    bone. Roast in 325 degree oven about 2 3/4 hours or until thermometer
    reaches 170 degrees. Meanwhile prepare the sauce: in 1 qt. saucepan
    over medium-high heat, cook remaining ingredients, stirring
    constantly, until mixture is smoth and thickened; set aside. During
    the last 30 minutes of roasting time, brush the meat generously two
    or three times with tomato sauce mixture. Serve with warm sauce.
