Boiled custard

3 tablespoons cornstarch
2 cups sugar
4 cups milk
3 eggs
3 teaspoons vanilla extract
Combine cornstarch and sugar in a large double boiler. Add milk and
stir over boiling water until mixture is very hot and begins to
thicken slightly. Beat eggs until frothy and stir 1/2-1 cup hot milk
mixture into eggs. Pour egg mixture into hot milk mixture. Whisk
constantly until thick about 10 minutes or until done. Remove from
heat and add vanilla extract. Cool and then refrigerate until ready
to use.
Serve over jell-o, cake, or ice cream. May serve plain with whipped
topping and toasted nuts. This is an easy, do-ahead dessert and nice
for gifts.
