Fiesta Rice

Yield: 4 servings
Ingredients
1 C- Low Fat shredded cheddar cheese
or Farmer's cheese, divided
2-1/2 C cooked brown rice
3/4 C – Low Fat cottage cheese (1%)
1- 2 oz jar pimientos, drained and chopped
1/2 C- Fat Free milk
1 lge tomato, peeled and diced
Dash paprika
Preheat oven to 350 degrees..
Combine 1/2 C of cheddar cheese with other ingredients with the
exception of paprika. Stir until well mixed.
Pour in mixture; top with remaining cheddar cheese and sprinkle well
with paprika.
Bake 25-30 minutes.
