Beet and Apple Salad

4 small beets, peeled and thinly sliced
2 Golden Delicious or Jonathan apples, cored and thinly sliced
1 cup plain nonfat yogurt
1 tsp. sugar
3 Tbs. lemon juice
3 Tbs. mayonnaise
1 scallion, chopped
Combine beets and apples in a bowl. Combine remaining ingredients, except scallions, in another bowl. Season with salt and pepper to taste. Pour dressing over beets and apples and toss. Serve sprinkled with chopped scallion.
