FARMERS CHOPPED SALAD

1 tsp salt
2 tbls fresh ground pepper (or to taste)
2-3 tbls tarragon vinegar
1 16 oz carton low fat cottage cheese
1 1/2 C. sour cream
2-3 C each chopped, cut or shredded: zucchini, radishes, red bell
peppers, green bell pepper, cauliflower, broccoli, carrots, green
beans.
This is crunchy, chilly, and delicious. It is great as part of a buffet
where something is needed as a foil to rich and hot foods.
