North Carolina Style Slaw

1 head cabbage, shredded
2 red and green bell peppers, finely chopped
1 cup cider vinegar
1 tsp. salt
1 tsp. pepper
1 tsp. ground red pepper (cayenne)
1/4 cup brown sugar
1/4 cup ketchup
Mix everything but cabbage and peppers and taste. Add whatever you
think you might want more of (ketchup and sugar reduce bitterness).
Pour it in with the vegetables and mix well. Let sit in refrigerator
to chill and allow flavor enhancement. Serve on a sandwich.
