SHRIMP, AVOCADO, & GRAPEFRUIT SALAD

DRESSING:
1/4 cup grapefruit juice
2 tbs. lemon juice
2 tbs. chopped cilantro
2 tsp. honey
1/4 tsp. each salt and pepper
1/2 cup olive oil
SALAD:
18 cooked shrimp, peeled with tails left on
6 leaves romaine lettuce
3 avocados, thinly sliced
2 pink grapefruit, sectioned
1/4 red onion, thinly sliced
DRESSING: Whisk grapefruit and lemon juice, cilantro, honey, salt, pepper in bowl to blend. Whisking constantly, slowly add olive oil. Divide dressing in half, mix half with the shrimp. Marinate 1 hour. Reserve remaining dressing for salad. TO SERVE: Line 6 salad plates with lettuce. Fan avocado and grapefruit on lettuce, top avocado with onion and place shrimp on the side. Drizzle all but shrimp with dressing. MAKES 6 SERVINGS.*
