Saucy Meatball Hoagies with Garlic

13 ounces ground beef
1/2 cup plus 2 Tbs. fresh breadcrumbs
1 egg, beaten
1-1/4 Tbs. grated Parmesan cheese, more for serving
3/4 cup plus 1 Tbs. onion, finely chopped
1 Tbs. plus 2 tsp. parsley, chopped
1-3/4 tsp. olive oil
2 cloves garlic, minced
3-1/4 tomatoes, puréed in a blender
3/4 tsp. Italian herb seasoning
5 hoagy sandwich buns
Preheat oven to 350°F. Combine first 3 ingredients, salt and pepper to taste, half the Parmesan, half the onion and half the parsley in a bowl. Form mixture into meatballs 1 inch in diameter. Arrange meatballs in an oiled glass baking dish. Bake 35-40 minutes or until meat is cooked throughout. Heat oil in a heavy nonstick skillet over medium heat. Sauté garlic and remaining onion 3-4 minutes or until onion is soft. Stir in tomatoes, herbs and remaining parsley. Increase heat to medium high and simmer vigorously 10 minutes or until thickened, stirring frequently. Arrange meatballs on buns and top with sauce. Sprinkle with remaining Parmesan before serving.
