"Barbecued" Beef Sandwiches

Vegetable cooking spray
3 to 3 1/2 pounds sirloin tip roast, fat removed
2 large onions, chopped
1 large green pepper, seeded and chopped
2 stalks celery, chopped
2 large cloves garlic, minced
8 ounce can unsalted tomato sauce
1 pound can unsalted stewed tomatoes
1/4 cup cider vinegar
1/3 cup firmly packed brown sugar
1 teaspoon chili powder
1/2 teaspoon dry basil
1/2 teaspoon oregano
1/2 teaspoon cinnamon
1/2 teaspoon dry mustard
1/2 teaspoon liquid smoke
1/2 teaspoon salt (optional)
10 onion rolls
Preparation Instructions:
Spray Dutch oven with cooking spray and place over medium-high heat. Add meat and brown on all sides; remove and set aside. Lower heat; add onions, green pepper, celery and garlic. Cook until onions are limp.
Add tomato sauce, tomatoes, vinegar, brown sugar and seasonings; simmer 10 minutes. Place meat in sauce. Cover and bake in a 325 degree oven for 3 hours or until meat is tender. Let cool, cover loosely, and
refrigerate one day. Skim fat, remove meat and thinly slice. Return meat to pan and layer with sauce. Cover and heat until hot and bubbly. To serve, spoon meat and sauce onto onion rolls. 10 servings.
