    Crockpot Onion Marmalade

    "Nana" to Bubbe & Alex

    1 bottle balsamic vinegar (1 1/2 cups)
    1 bottle white wine vinegar (1 1/2 cups)
    1 1/2 cups dark brown sugar
    3 T. arrowroot or cornstarch dissolved in 2 T. water
    2 t. cumin seeds
    2 t. coriander seeds
    4 large yellow onions, sliced into halves, then into 1/4" slices

    With exhaust fan running, cook vinegars in large pan over high heat until reduced to 1/4 cup. Sauce will be thick and syrup. Remove from heat. Add brown sugar, arrowroot mixture, cumin and coriander. Blend well. Place onions in slow cooker. Add balsamic syrup mixture; mix well. Cover and cook on low for 8 to 10 hours, or on high for 4 to 6 hours or until onions are no longer crunchy. Stir frequently. Will keep in refrigerator several weeks. Makes about 5 cups
