3-4 SHALLOTS OR GREEN ONIONS, MINCED
SAUTE IN 3 TBL. BUTTER UNTIL SOFT.
WASH AND SLICE I POUND MUSHROOMS
SAUTE IN SAME PAN UNTIL SOFT.
MIX 1 CUP BEEF BROTH, 3/4 C RED WINE AND 2-3 TSP. CORNSTARCH.
POUR OVER MUSHROOM MIXTURE AND COOK UNTIL SLIGHTLY THICKENED
AND ALCOHOL HAS EVAPORATED. POUR OVER GRILLED OR PAN-FRIED
STEAK.
SERVES 5-6 GENEROUSLY. ( ALSO GREAT OVER ROASTED FILET
SLICES.)
