    Zesty Cranberry-Orange Relish

    2 envelopes Knox Unflavored Gelatin
    1 cup cold water
    3 cups cranberries
    1 medium orange, peeled, sectioned
    3/4 cup sugar
    1 TB grated orange peel

    Sprinkle gelatin over cold water in small saucepan; let stand 1
    minute. Stir on low heat until gelatin completely dissolves, about 2
    minutes.

    Place cranberries, orange sections, sugar and orange peel in electric
    blender or food processor; cover. Blend until coarsely chopped. While
    processing, gradually add gelatin mixture through feed cap, processing
    until well blended. Pour into 4-cup mold or bowl. Refrigerate until
    firm, about 3 hours.

    Unmold onto serving platter to serve.

    Makes: 3-1/2 cups.
