    a.. 1 cup pineapple, diced

    a.. 1 cup orange sections, diced

    a.. 1 cup jicama, diced

    a.. 1/2 cup red onion, diced

    a.. 1/2 cup red bell pepper, diced

    a.. 1 jalapeno pepper, minced

    a.. 1/4 cup lime juice, freshly squeezed

    a.. 1 t fresh ginger root, minced

    a.. 1 T fresh mint, minced

    a.. 1 T honey

    Method:
    Combine all of the ingredients in a medium sized, non-reactive bowl, cover and refrigerate for several hours before serving.
