Baked Crabmeat Casserole

4 tablespoons butter (unsalted best)
1 teaspoon onion, finely chopped
4 tablespoons all purpose flour
2 cups whole milk
1/2 teaspoon celery salt
1 teaspoon Worcestershire sauce
dash of cayenne pepper
salt and pepper to taste
1 egg yolk, beaten
1 cup soft bread crumbs
2 cups crab meat
1 tablespoon parsley, minced
Preheat oven to 375º
Melt butter, add onion and cook over low heat until onion is lightly browned. Add flour, blend together thoroughly.
Add milk and seasonings and cook until mixture has thickened, stirring occasionally. Add egg yolk, stir, and remove saucepan from heat. Add most of the bread crumbs, reserving a small portion to sprinkle over top of mixture. Then add crab meat and parsley to the mixutre and gently blend.
Spray casserole dishes lightly with cooking spray. If you can use individual casserole dishes, do so, if not use a regular casserole dish.
Top with remaining bread crumbs.
Bake for 20 to 30 minutes, or until bubbly.
