Brocolli and Cheese Soup

1 18-oz package frozen broccoli/cauliflower mix,
chopped into small pieces
1 C carrots, sliced
1 C celery, sliced
1 large onion, chopped fine
1 qt water
4 chicken bouillon cubes
1 can cream of chicken soup
1 can cheddar cheese soup
8 oz processed cheese, cut into chunks
8 oz American cheese, cut into chunks
Place water and bouillon cubes in large saucepan;
bring to boil over medium-high heat. Reduce heat to
medium; add carrots, celery and onion and cook for
about 5 minutes. Reduce heat to medium-low; add
remaining ingredients. Stir frequently until cheeses
are melted. Continue to cook, stirring often, until
vegetables are firm yet tender. Serves 8-10.
Option 1: Add cooked, diced chicken for a complete
meal.
Option 2: Delicious served over baked potatoes.
