CHICKEN SALAD LOG

1 (8 oz.) pkg. cream cheese, softened
1/4 c. mayonnaise
2 tbsp. lemon juice
1/2 tsp. salt
1/2 tsp. ground ginger
1/8 tsp. pepper
Dash hot sauce
2 c. cooked chicken, diced
2 boiled eggs, chopped fine
1/4 c. green onion, chopped
1/4 c. black olives, finely chopped
1/4 c. pimento, finely chopped
Mix cheese, mayo, lemon juice, salt, ginger, pepper and hot sauce. Stir in chicken, eggs and onion. Shape into log, about 8 inches long. Wrap in plastic wrap and refrigerator until firm, about 4 hours. Press olives and pimiento into surface of log. Serve with crackers. Serves 10 to 12.
