MARINATED GOAT CHEESE

Mince 1 sprig each fresh rosemary, thyme, marjoram. Crush 1 tsp. assorted red, green, and black peppercorns. Combine on small plate. Slice 10 oz goat cheese log into 5 rounds, roll edges of each in herb mixture. Set in bottom of container with tight fitting lid. Pour in 2 cups olive oil, add 2 fresh bay leaves, 2 cloves garlic, and 1 tsp fresh coriander seeds. Refrigerate, covered, at least 2 days before serving. Complement with a glass Chianti and Australian Shriaz.*
