2 c Sugar
1 c Vinegar
1 c Beet juice
1 ts Whole cloves
1 Stick cinnamon
1 ts Ground black pepper
1 Lemon, sliced
3 cn Small whole beets, drained except for the one cup used above (up to 4)
Combine all ingredients and heat only to a boil. Cool and store in a sealed jar in the fridge.
