1/3 cup sugar
1/3 tsp salt or to taste
2 tblsp cornstarch
1/2 cup mild vinegar
2 cups sliced cooked beets or 10-12 small beets, cooked, peeled and sliced
2 tblsp butter or margarine
Mix sugar, salt and cornstarch; add to vinegar. Boil for 5 minutes. Pour over hot beets; cover. Cook over low heat for 30 minutes. Add butter just before serving.
Note: 1/4 cup vinegar and 1/4 cup water or beet liquid may be substituted for 1/2 cup vinegar.
